My Top 5 Vegetarian Recipes

I love switching up my menu! I eat very little meat, only fish from time to time. And you should do it too! You eat 21 meals a week, making the switch out for one meatless meal can do wonders for you! A meal made solely of vegetables is a great way to increase vitamins you could be lacking elsewhere in your diet. Here are some of my favourite vegetarian dishes:

THE BEST BURGER

I love these chickpea-based burgers from Jamie Oliver. I always use dried chickpeas so overnight soaking is a must but simply blend your chickpeas and sweetcorn and season with an array of herbs and spices and you have the nicest little patties to eat in a burger bun or on the side of a salad. So fresh and delish!

THE NEW SPAGHETTI BOLOGNESE

I adore this low carb recipe from BBC GoodFood. I don't have a spiralizer so instead I just grate the courgette with a vegetable peeler and heat it in a large frying pan with a little salt and pepper. The ragu with lentils instead of mince is delicious and very satisfying. 

THE PIZZA UPDATE

I am a huge sucker for pizza. So much so, that the gals in Dominos literally chuck everything onto a base when they see me coming. But what if I told you you can cut meat out of your diet and still have pizza? I love love love veggie pizzas and this one from The Kitchn is too good not to share.

THE ULTIMATE HUMMUS

There is nothing quite like homemade hummus and this one from Half Baked Harvest has the balance just right. Hummus is so customisable too, I love adding chili flakes or chopped sundried tomatoes. A delicious way to spice up your blasΓ© carrot sticks. I got your back ;) 

THE NEW TUNA SANDWICH

If you're a pescatarian I highly recommend these tuna & sweetcorn fishcakes from BBC GoodFood. These are full of flavour and also fill you up with great, healthy ingredients. They're quick to whip up and cook and can be eaten as a main or on the side of a salad or poached egg. The crunchy breaded coating is oh-so-satisfying, too. These are also reeeaaally cheap to make.
